It was 27 years ago that Food Street opened in the city of Guangzhou and made history as China’s first ever restaurant with an open kitchen. Head Chef Li Man should know - he helped launch the place. So what is it about Food Street that kept him there for over a quarter of a century? “I love the restaurant, so I wanted to stay”, he answers, simply. “Food Street has retained its old, classic Cantonese flavour and that’s what makes it special.”
Li Man calls on the traditions of Guangzhou, formerly known as Canton, to produce comforting, hearty food. “The concept of the restaurant is what I’d call ‘live theatre’, and it’s a throwback to the old markets”, he says. “It has a station where we make the noodles from scratch and cut them, as well as one where we make and boil dim sum, so you can see what’s going on. It’s as though you’re behind the scenes.”
